- 1 cup apple butter
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin with paper liners.
- Combine the apple butter, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract in a large bowl. Whisk until smooth.
- Whisk together the flour, baking soda, baking powder, cinnamon, and salt in another bowl.
- Fold the dry ingredients into the wet mix gently until just combined.
- Spoon the batter into muffin cups until two-thirds full.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Cool in the pan for a few minutes, then transfer to a wire rack.
