Description

Deliciously moist Apple Butter Muffins infused with warm spices, perfect for breakfast or an afternoon snack.


Ingredients

  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with paper liners.
  2. Combine the apple butter, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract in a large bowl. Whisk until smooth.
  3. Whisk together the flour, baking soda, baking powder, cinnamon, and salt in another bowl.
  4. Fold the dry ingredients into the wet mix gently until just combined.
  5. Spoon the batter into muffin cups until two-thirds full.
  6. Bake for 18-20 minutes, or until a toothpick comes out clean.
  7. Cool in the pan for a few minutes, then transfer to a wire rack.
