Instructions

- Add diced apple, cinnamon, maple syrup, and vanilla extract to the mixture. Stir until well combined.
- Cover the bowl and refrigerate for at least 2 hours or overnight to allow the chia seeds to expand.
- Before serving, stir the pudding again and top with additional apple slices and a sprinkle of cinnamon if desired.
