Ingredients

- 2 cups rolled oats
- 2 cups milk (or non-dairy alternative)
- 2 apples, diced
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 2 eggs
- 1 teaspoon vanilla extract
- 1/4 cup chopped nuts (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine rolled oats, milk, diced apples, brown sugar, cinnamon, salt, and baking powder.
- In another bowl, whisk together eggs and vanilla extract.
- Mix the egg mixture into the oat mixture until well combined.
- Pour the mixture into a greased baking dish.
- If using, sprinkle chopped nuts on top.
- Bake for 30-35 minutes or until the top is golden and set.
- Let cool for a few minutes before serving.
Notes
- Can be stored in the refrigerator for up to 5 days.
- Reheat individual portions in the microwave.
