Ingredients

  • 1 lb chicken breast, diced
  • 1 cup cooked rice
  • 1 cup broccoli florets
  • 1 cup bell peppers, sliced
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 2 tablespoons sriracha sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix mayonnaise, sweet chili sauce, sriracha, and soy sauce to create the Bang Bang sauce.
  2. Heat olive oil in a pan over medium heat and add diced chicken. Season with salt and pepper.
  3. Cook the chicken until golden brown and cooked through, about 5-7 minutes.
  4. Add broccoli and bell peppers to the pan and stir-fry for an additional 3-4 minutes.
  5. Remove from heat and toss the chicken and vegetables with the Bang Bang sauce.
  6. Serve the chicken and vegetable mixture over cooked rice.
  7. Garnish with additional sauce if desired and enjoy!
