Delicious Belgian waffles served with a sweet and tangy berry compote.
Ingredients

- 2 cups all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1 3/4 cups milk
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 2 cups mixed berries (strawberries, blueberries, raspberries)
- 1/4 cup sugar (for compote)
- 1 tablespoon lemon juice
Instructions
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, beat the eggs and then add milk, vegetable oil, and vanilla extract.
- Combine the wet and dry ingredients, mixing until just combined.
- Preheat the waffle iron and pour the batter into it, cooking until golden brown.
- For the berry compote, combine mixed berries, sugar, and lemon juice in a saucepan over medium heat.
- Cook until the berries break down and the mixture thickens, about 10 minutes.
- Serve the waffles topped with the warm berry compote.
Notes
- For a lighter waffle, separate the egg whites and beat them until stiff peaks form, then fold them into the batter.
- Feel free to use any combination of berries for the compote.
- Waffles can be kept warm in a low oven while you cook the rest.
