Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 3/4 cups milk
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 1/4 cup sugar (for compote)
  • 1 tablespoon lemon juice

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  2. In another bowl, beat the eggs and then add milk, vegetable oil, and vanilla extract.
  3. Combine the wet and dry ingredients, mixing until just combined.
  4. Preheat the waffle iron and pour the batter into it, cooking until golden brown.
  5. For the berry compote, combine mixed berries, sugar, and lemon juice in a saucepan over medium heat.
  6. Cook until the berries break down and the mixture thickens, about 10 minutes.
  7. Serve the waffles topped with the warm berry compote.

Notes

  • For a lighter waffle, separate the egg whites and beat them until stiff peaks form, then fold them into the batter.
  • Feel free to use any combination of berries for the compote.
  • Waffles can be kept warm in a low oven while you cook the rest.
