Ingredients

- 1 cup quinoa
- 2 cups water
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 1 tablespoon honey or maple syrup
- Salt and pepper to taste
- Fresh mint leaves for garnish (optional)
Instructions
- Rinse the quinoa under cold water.
- In a saucepan, combine quinoa and water; bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
- In a small bowl, whisk together balsamic vinegar, olive oil, honey or maple syrup, salt, and pepper.
- Fluff the cooked quinoa with a fork and let it cool slightly.
- In a large bowl, combine quinoa, mixed berries, and dressing; toss gently to combine.
- Serve in bowls and garnish with fresh mint leaves if desired.
Notes
- For a vegan option, use maple syrup instead of honey.
- Feel free to substitute any berries you prefer.
