Ingredients

  • 2 cups water
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey or maple syrup
  • Salt and pepper to taste
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Rinse the quinoa under cold water.
  2. In a saucepan, combine quinoa and water; bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
  4. In a small bowl, whisk together balsamic vinegar, olive oil, honey or maple syrup, salt, and pepper.
  5. Fluff the cooked quinoa with a fork and let it cool slightly.
  6. In a large bowl, combine quinoa, mixed berries, and dressing; toss gently to combine.
  7. Serve in bowls and garnish with fresh mint leaves if desired.

Notes

  • For a vegan option, use maple syrup instead of honey.
  • Feel free to substitute any berries you prefer.
