Ingredients

  • 34 lbs beef chuck roast
  • 2 large onions, sliced
  • 1 cup beef broth
  • 1 cup French onion soup
  • 2 tablespoons Worcestershire sauce
  • 4 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Season the beef chuck roast with salt and pepper.
  2. In a skillet, sear the roast on all sides until browned.
  3. Place the sliced onions at the bottom of the crock pot.
  4. Add the seared roast on top of the onions.
  5. In a bowl, mix together the beef broth, French onion soup, Worcestershire sauce, garlic, and thyme.
  6. Pour the mixture over the roast in the crock pot.
  7. Cover and cook on low for 8 hours or high for 4 hours.
  8. Once cooked, shred the meat and serve with the onions and sauce.
  9. Garnish with fresh parsley before serving.
