Ingredients

  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 4 cups vegetable broth
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Rinse the black-eyed peas and soak them in water overnight.
  2. In a large pot, heat olive oil over medium heat.
  3. Add the chopped onion, garlic, carrot, and celery; sauté until softened.
  4. Drain the soaked peas and add them to the pot.
  5. Pour in the vegetable broth and add thyme and bay leaf.
  6. Bring to a boil, then reduce heat and simmer for about 45 minutes or until peas are tender.
  7. Remove the bay leaf, season with salt and pepper, and serve hot.

Notes

  • For a spicier version, add red pepper flakes.
