  • 2 tablespoons caster sugar
  • 1 teaspoon vanilla extract
  • ½ cup blueberries (fresh or thawed)
  • 1 loaf day-old brioche, sliced thick (8 slices)
  • 1 egg
  • ½ cup milk
  • ½ cup cream
  • 1 teaspoon cinnamon
  • Butter, for frying
  • Extra blueberries, icing sugar, for dusting
  • Maple syrup, for drizzling

Instructions

  1. Combine the softened cream cheese, caster sugar, and vanilla extract in a mixing bowl. Beat until smooth and gently fold in the blueberries.
  2. Slice the brioche loaf into thick 1.5-inch slices and cut a deep pocket in the middle of each slice.
  3. Fill each brioche slice with about 1–2 tablespoons of the cheesecake mixture.
  4. Whisk together the egg, milk, cream, and cinnamon in a shallow dish until well combined.
  5. Heat a large skillet over medium heat and add a knob of butter.
  6. Dip each stuffed slice into the egg mixture, coating both sides.
  7. Place the slices in the skillet and cook for about 3–4 minutes per side until golden brown.
  8. Transfer to a plate and repeat with the remaining slices.
  9. Top with icing sugar, extra blueberries, and drizzle with maple syrup.
  10. Serve warm and enjoy your breakfast bliss!

Notes

Use day-old brioche for the best texture. Feel free to prepare the cream cheese filling a day in advance for enhanced flavor.
