A delicious and fun appetizer featuring potato skins stuffed with spicy buffalo chicken, perfect for game day or any gathering.
Ingredients

- 4 large russet potatoes
- 2 cups shredded cooked chicken
- 1/2 cup buffalo sauce
- 1 cup shredded cheddar cheese
- 1/2 cup cream cheese, softened
- 1/4 cup green onions, chopped
- Salt and pepper to taste
- Olive oil for brushing
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and scrub the potatoes, then pierce them with a fork.
- Rub the potatoes with olive oil and sprinkle with salt.
- Bake the potatoes for about 45-60 minutes until tender.
- Once cool, cut the potatoes in half and scoop out some of the flesh to create a skin.
- In a bowl, mix the shredded chicken, buffalo sauce, cream cheese, and half of the cheddar cheese.
- Fill each potato skin with the buffalo chicken mixture.
- Top with the remaining cheddar cheese and green onions.
- Return to the oven and bake for an additional 15-20 minutes until the cheese is melted and bubbly.
- Serve hot and enjoy!
Notes
- For a milder flavor, use less buffalo sauce.
- These can be made ahead of time and reheated before serving.
- Feel free to add other toppings like sour cream or ranch dressing.
