Cajun Shrimp Guacamole Bites are a delicious appetizer that combines spicy Cajun shrimp with creamy guacamole, served on crispy tortilla chips.

- 1 lb shrimp, peeled and deveined
- 2 tablespoons Cajun seasoning
- 2 avocados, mashed
- 1 lime, juiced
- 1/4 cup diced red onion
- 1/4 cup chopped cilantro
- 1 jalapeño, diced
- 12 tortilla chips
- Salt and pepper to taste
Instructions
- In a bowl, toss the shrimp with Cajun seasoning until well coated.
- Heat a skillet over medium heat and cook the shrimp for 2-3 minutes on each side until pink and cooked through.
- In another bowl, mix the mashed avocados, lime juice, red onion, cilantro, jalapeño, salt, and pepper to make the guacamole.
- On each tortilla chip, place a spoonful of guacamole and top with a piece of Cajun shrimp.
- Serve immediately and enjoy!
Notes
- Adjust the spiciness by adding more or less Cajun seasoning.
- For a creamier guacamole, add a tablespoon of sour cream.
- These bites are best served fresh to maintain the crunch of the tortilla chips.
