Instructions
- In a saucepan, combine sugar, corn syrup, and water. Cook over medium heat until the mixture reaches 250°F (hard ball stage).
- While the syrup is cooking, beat the egg whites in a large bowl until stiff peaks form.
- Once the syrup reaches the desired temperature, slowly pour it into the beaten egg whites while continuing to beat the mixture.
- Add vanilla extract and mix until well combined.
- Fold in the chopped candied cherries and nuts if using.
- Spread the mixture into a greased square pan and let it cool completely.
- Once cooled, cut into squares and serve.
