Ingredients

- 1 cup grated fresh carrots
- 1 cup pitted dates
- 1/2 cup walnuts, chopped
- 1 cup rolled oats
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- Pinch of salt
- Shredded coconut for rolling (optional)
Instructions
- Blend the grated carrots, pitted dates, chopped walnuts, rolled oats, vanilla extract, cinnamon, nutmeg, and a pinch of salt in a food processor until sticky and cohesive.
- Form about a tablespoon of the mixture into a ball, approximately 1 inch in diameter.
- Roll each ball in shredded coconut if desired for extra flavor.
- Chill the bliss balls in an airtight container for at least 30 minutes before enjoying.
Notes
These bliss balls can be made in advance and stored in the refrigerator for a quick snack. They can also be frozen for up to three months.
