Ingredients

  • 1 cup grated fresh carrots
  • 1 cup pitted dates
  • 1/2 cup walnuts, chopped
  • 1 cup rolled oats
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • Pinch of salt
  • Shredded coconut for rolling (optional)

Instructions

  1. Blend the grated carrots, pitted dates, chopped walnuts, rolled oats, vanilla extract, cinnamon, nutmeg, and a pinch of salt in a food processor until sticky and cohesive.
  2. Form about a tablespoon of the mixture into a ball, approximately 1 inch in diameter.
  3. Roll each ball in shredded coconut if desired for extra flavor.
  4. Chill the bliss balls in an airtight container for at least 30 minutes before enjoying.

Notes
