Ingredients

  • 2 lbs potatoes, peeled and diced
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 4 large eggs
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup cooked and crumbled bacon (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the diced potatoes, onion, bell pepper, garlic powder, salt, and pepper.
  3. In another bowl, whisk together the eggs and milk.
  4. Layer half of the potato mixture in a greased baking dish.
  5. Pour half of the egg mixture over the potatoes, then sprinkle with half of the cheese.
  6. Repeat the layers with the remaining potatoes, egg mixture, and cheese.
  7. If using, sprinkle the crumbled bacon on top.
  8. Bake for 45-50 minutes, or until the potatoes are tender and the top is golden brown.
  9. Let it cool for a few minutes before serving.
