Instructions
- In a medium saucepan, combine the cherries, sugar, water, and lemon juice.
- Bring the mixture to a boil over medium heat, stirring occasionally.
- Reduce the heat and let it simmer for about 20 minutes, or until the cherries are soft and the mixture thickens.
- Stir in the almond extract and cook for an additional 5 minutes.
- Remove from heat and let it cool slightly before transferring to sterilized jars.
- Seal the jars and store in the refrigerator.
