Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ½ cup unsalted butter, softened
  • 1 cup milk
  • 3 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1 cup cherry pie filling
  • 8 oz cream cheese, softened
  • 4 cups powdered sugar
  • ½ cup cherry pie filling (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract and cherry pie filling.
  5. In another bowl, combine the flour and baking powder.
  6. Gradually add the dry ingredients to the wet mixture, alternating with milk, until well combined.
  7. Divide the batter evenly between two greased 9-inch round cake pans.
  8. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  9. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  10. For the frosting, beat the cream cheese until smooth, then gradually add the powdered sugar and cherry pie filling until well combined.
  11. Once the cakes are cool, spread frosting between the layers and on top of the cake.

Notes

  • For a richer flavor, use fresh cherries instead of pie filling.
  • Store leftovers in the refrigerator for up to 3 days.
  • This cake can be made a day in advance for better flavor.
