Ingredients

- 1/2 cup fresh lime juice
- 1 cup sugar
- 1/4 cup water
- 1–2 teaspoons chili flakes (adjust to taste)
- 1 package (1.75 oz) fruit pectin
Instructions
- In a large pot, combine the pitted cherries, lime juice, sugar, and water.
- Bring the mixture to a boil over medium heat, stirring frequently.
- Add the chili flakes and stir well.
- Once boiling, add the fruit pectin and continue to boil for 1-2 minutes, stirring constantly.
- Remove from heat and let it cool slightly before pouring into sterilized jars.
- Seal the jars and let them cool completely at room temperature.
