- 500g Bread Flour
- 100g Cocoa Powder
- 100g Sourdough Starter
- 350ml Warm Water
- 10g Salt
- 150g Dark Chocolate (chopped)
- 30g Sugar
Instructions
- Combine the bread flour, cocoa powder, and sugar in a large mixing bowl.
- Create a well in the center and add the sourdough starter and warm water.
- Mix until you form a shaggy mass.
- Knead for about 10 minutes until smooth and elastic.
- Add the salt and knead again to incorporate.
- Fold in the chopped dark chocolate.
- Transfer the dough to an oiled bowl, cover, and let it rise for 4 to 6 hours.
- Shape the dough into a round loaf and rise in a proofing basket for 1 to 2 hours.
- Preheat your oven to 450°F (230°C) with the Dutch oven inside.
- Transfer the dough into the heated Dutch oven, cover, and bake for 30 minutes.
- Remove the lid and bake for an additional 15 minutes.
- Cool completely on a wire rack before slicing.

Make-ahead tips: Prepare your sourdough starter the night before for best results. You can also refrigerate shaped dough overnight.
