Description

Ingredients

Scale
  • 500g Bread Flour
  • 100g Cocoa Powder
  • 100g Sourdough Starter
  • 350ml Warm Water
  • 10g Salt
  • 150g Dark Chocolate (chopped)
  • 30g Sugar

Instructions

  1. Combine the bread flour, cocoa powder, and sugar in a large mixing bowl.
  2. Create a well in the center and add the sourdough starter and warm water.
  3. Mix until you form a shaggy mass.
  4. Knead for about 10 minutes until smooth and elastic.
  5. Add the salt and knead again to incorporate.
  6. Fold in the chopped dark chocolate.
  7. Transfer the dough to an oiled bowl, cover, and let it rise for 4 to 6 hours.
  8. Shape the dough into a round loaf and rise in a proofing basket for 1 to 2 hours.
  9. Preheat your oven to 450°F (230°C) with the Dutch oven inside.
  10. Transfer the dough into the heated Dutch oven, cover, and bake for 30 minutes.
  11. Remove the lid and bake for an additional 15 minutes.
  12. Cool completely on a wire rack before slicing.

Notes

Make-ahead tips: Prepare your sourdough starter the night before for best results. You can also refrigerate shaped dough overnight.
