- 1 cup sourdough starter
- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1/2 cup sugar
- 1/2 cup chocolate chips
- 1/2 cup milk
- 1/4 cup vegetable oil
- 2 large eggs
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- Line a muffin tin with paper liners or grease it lightly.
- In a large mixing bowl, whisk together the sourdough starter, milk, vegetable oil, and sugar until smooth.
- In another bowl, sift together all-purpose flour, cocoa powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing just until combined.
- Fold in the chocolate chips gently using a spatula.
- Distribute the batter evenly among the muffin cups, filling each about 3/4 full.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Let cool in the tin for a few minutes before transferring to a wire rack to cool completely.
Notes
You can prepare the batter a day in advance and refrigerate overnight. These muffins can also be made vegan by substituting eggs with flaxseed meal mixed with water.
