Description

Ingredients

  • 1 cup sourdough starter
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 cup sugar
  • 1/2 cup chocolate chips
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a muffin tin with paper liners or grease it lightly.
  3. In a large mixing bowl, whisk together the sourdough starter, milk, vegetable oil, and sugar until smooth.
  4. In another bowl, sift together all-purpose flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  6. Fold in the chocolate chips gently using a spatula.
  7. Distribute the batter evenly among the muffin cups, filling each about 3/4 full.
  8. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  9. Let cool in the tin for a few minutes before transferring to a wire rack to cool completely.

Notes

You can prepare the batter a day in advance and refrigerate overnight. These muffins can also be made vegan by substituting eggs with flaxseed meal mixed with water.
