  • 1/4 teaspoon black pepper
  • 1 avocado, diced (optional)

Instructions

  1. Rinse the quinoa: Place it in a colander and run it under cold water for about 30 seconds.
  2. Cook the quinoa: In a medium-sized pot, combine the rinsed quinoa and 2 cups of water. Bring mixture to a gentle boil, then cover and reduce to a simmer. Cook for about 15 minutes or until all water is absorbed.
  3. Let it rest: Remove the pot from heat and let it sit covered for 5 minutes.
  4. Mix the ingredients: In a large mixing bowl, combine the cooled quinoa with chopped cilantro, fresh lime juice, diced bell peppers, halved cherry tomatoes, and red onion. Season with salt and pepper.
  5. Toss gently: Carefully toss until everything is well combined.
  6. Add avocado: Fold in the diced avocado just before serving if desired.
  7. Serve and enjoy: This refreshing salad can be enjoyed chilled or at room temperature.
