- 1 lb shrimp, peeled and deveined
- 1/4 cup fresh cilantro, chopped
- 2 limes, juiced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 8 small corn tortillas
- 2 cups cabbage, shredded
- 1/2 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1 teaspoon sugar
- 1/4 teaspoon cayenne pepper
Instructions
- In a bowl, combine shrimp, cilantro, lime juice, olive oil, garlic powder, cumin, salt, and pepper. Marinate for 15-20 minutes.
- In another bowl, mix together cabbage, mayonnaise, apple cider vinegar, sugar, and cayenne pepper to make the slaw.
- Heat a skillet over medium-high heat and cook the marinated shrimp for 2-3 minutes on each side until cooked through.
- Warm the corn tortillas in a separate skillet or microwave.
- Assemble the tacos by placing shrimp on the tortillas and topping with creamy slaw.
- Serve immediately and enjoy!
Notes
- For extra flavor, add avocado slices or fresh jalapeños.
- These tacos can be served with lime wedges on the side.
- Adjust the spiciness of the slaw by adding more or less cayenne pepper.
