Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1/4 cup fresh cilantro, chopped
  • 2 limes, juiced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 2 cups cabbage, shredded
  • 1/2 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • 1/4 teaspoon cayenne pepper

Instructions

  1. In a bowl, combine shrimp, cilantro, lime juice, olive oil, garlic powder, cumin, salt, and pepper. Marinate for 15-20 minutes.
  2. In another bowl, mix together cabbage, mayonnaise, apple cider vinegar, sugar, and cayenne pepper to make the slaw.
  3. Heat a skillet over medium-high heat and cook the marinated shrimp for 2-3 minutes on each side until cooked through.
  4. Warm the corn tortillas in a separate skillet or microwave.
  5. Assemble the tacos by placing shrimp on the tortillas and topping with creamy slaw.
  6. Serve immediately and enjoy!

Notes

  • For extra flavor, add avocado slices or fresh jalapeños.
  • These tacos can be served with lime wedges on the side.
  • Adjust the spiciness of the slaw by adding more or less cayenne pepper.
