A refreshing and healthy Citrus Salmon & Arugula Bowl that combines the flavors of citrus with tender salmon and peppery arugula.


Ingredients

  • 2 salmon fillets
  • 1 cup arugula
  • 1 orange, segmented
  • 1 grapefruit, segmented
  • 1 avocado, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the salmon fillets on a baking sheet and drizzle with olive oil, honey, salt, and pepper.
  3. Bake the salmon for 12-15 minutes or until cooked through.
  4. In a large bowl, combine arugula, orange segments, grapefruit segments, and avocado slices.
  5. Once the salmon is done, flake it into large pieces and add it to the salad.
  6. Toss gently to combine and serve immediately.
