A refreshing and healthy Citrus Salmon & Arugula Bowl that combines the flavors of citrus with tender salmon and peppery arugula.
Ingredients

- 2 salmon fillets
- 1 cup arugula
- 1 orange, segmented
- 1 grapefruit, segmented
- 1 avocado, sliced
- 2 tablespoons olive oil
- 1 tablespoon honey
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Place the salmon fillets on a baking sheet and drizzle with olive oil, honey, salt, and pepper.
- Bake the salmon for 12-15 minutes or until cooked through.
- In a large bowl, combine arugula, orange segments, grapefruit segments, and avocado slices.
- Once the salmon is done, flake it into large pieces and add it to the salad.
- Toss gently to combine and serve immediately.
Notes
- For added flavor, marinate the salmon in citrus juice for 30 minutes before baking.
- This dish can be served warm or cold.
- Feel free to add other vegetables or nuts for extra crunch.
