Ingredients

  • 2 cups jasmine rice
  • 1 can (14 oz) coconut milk
  • 1 lb chicken thighs, boneless and skinless
  • 1 cup chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a large pot, heat olive oil over medium heat and sauté the onion, garlic, and ginger until fragrant.
  3. Add the chicken thighs to the pot and cook until browned on both sides.
  4. Stir in the coconut milk, chicken broth, soy sauce, salt, and pepper.
  5. Add the rinsed rice to the pot and bring to a boil.
  6. Reduce heat to low, cover, and simmer for about 20 minutes or until the rice is cooked and the chicken is tender.
  7. Remove from heat and let it sit covered for 5 minutes.
  8. Fluff the rice with a fork and serve garnished with fresh cilantro.
