Ingredients

  • 2 cups jasmine rice
  • 1 can (13.5 oz) coconut milk
  • 1 lb chicken breast, diced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • 1 cup mixed vegetables (bell peppers, carrots, peas)
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a pot, combine the rinsed rice and coconut milk. Add water according to the rice package instructions.
  3. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes until rice is cooked.
  4. In a skillet, heat olive oil over medium heat. Add garlic and ginger, sauté for 1 minute.
  5. Add diced chicken to the skillet, season with soy sauce, salt, and pepper. Cook until chicken is browned and cooked through.
  6. Add mixed vegetables to the skillet and cook for an additional 5 minutes until tender.
  7. Fluff the coconut rice with a fork and serve in bowls topped with the chicken and vegetable mixture.
  8. Garnish with fresh cilantro before serving.
