- 1 lb large shrimp, peeled and deveined
- 1 cup shredded coconut
- 1 cup panko breadcrumbs
- 2 eggs, beaten
- 1 cup all-purpose flour
- 1 ripe mango, peeled and diced
- 1/4 cup mayonnaise
- 1 tablespoon lime juice
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with a mixture of shredded coconut and panko breadcrumbs.
- Season the shrimp with salt and pepper.
- Dredge each shrimp in flour, dip in the egg, and then coat with the coconut-panko mixture.
- Place the breaded shrimp on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes or until golden brown and crispy.
- While the shrimp is baking, prepare the mango dip by blending the diced mango, mayonnaise, lime juice, and a pinch of salt until smooth.
- Serve the coconut shrimp hot with the mango dip on the side.
Notes
- For extra flavor, add some chili powder to the coconut-panko mixture.
- Make sure the shrimp are completely dry before breading for better adhesion.
- This dish can also be deep-fried for a crunchier texture.
