Description

Coconut Shrimp with Mango Dip is a delicious and tropical dish that combines crispy shrimp coated in coconut flakes with a sweet and tangy mango dipping sauce.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 cup shredded coconut
  • 1 cup panko breadcrumbs
  • 2 eggs, beaten
  • 1 cup all-purpose flour
  • 1 ripe mango, peeled and diced
  • 1/4 cup mayonnaise
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with a mixture of shredded coconut and panko breadcrumbs.
  3. Season the shrimp with salt and pepper.
  4. Dredge each shrimp in flour, dip in the egg, and then coat with the coconut-panko mixture.
  5. Place the breaded shrimp on a baking sheet lined with parchment paper.
  6. Bake for 15-20 minutes or until golden brown and crispy.
  7. While the shrimp is baking, prepare the mango dip by blending the diced mango, mayonnaise, lime juice, and a pinch of salt until smooth.
  8. Serve the coconut shrimp hot with the mango dip on the side.

Notes

  • For extra flavor, add some chili powder to the coconut-panko mixture.
  • Make sure the shrimp are completely dry before breading for better adhesion.
  • This dish can also be deep-fried for a crunchier texture.
