- 1 batch Homemade Cornbread, crumbled
- 1 cup Bell Peppers, diced
- 1 cup Onions, diced
- 1 cup Celery, diced
- 2 cups Chicken or Vegetable Broth
- 1/4 cup Fresh Parsley, chopped
- 1 tablespoon Fresh Thyme, chopped
- Salt, to taste
- Black Pepper, to taste
- 1/4 cup Olive Oil
Instructions
- Preheat your oven to 350°F (175°C).
- Heat olive oil in a skillet over medium heat. Add diced bell peppers, onions, and celery. Sauté for 5-7 minutes until softened.
- Crumble the homemade cornbread into a large mixing bowl.
- Add the sautéed vegetables to the crumbled cornbread.
- Pour in broth to moisten the mixture and stir in fresh herbs, salt, and pepper.
- Transfer the mixture to a greased baking dish, pressing down gently.
- Bake for 30-35 minutes until golden brown and crispy on top.
- Serve warm as a side dish or part of a vegetarian meal.
Notes
Use stale cornbread for better texture. Customize by adding cooked sausage or nuts if desired.
