Delightful Cornbread Stuffing combining savory and sweet flavors with fresh vegetables.


Ingredients

  • 1 batch Homemade Cornbread, crumbled
  • 1 cup Bell Peppers, diced
  • 1 cup Onions, diced
  • 1 cup Celery, diced
  • 2 cups Chicken or Vegetable Broth
  • 1/4 cup Fresh Parsley, chopped
  • 1 tablespoon Fresh Thyme, chopped
  • Salt, to taste
  • Black Pepper, to taste
  • 1/4 cup Olive Oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat olive oil in a skillet over medium heat. Add diced bell peppers, onions, and celery. Sauté for 5-7 minutes until softened.
  3. Crumble the homemade cornbread into a large mixing bowl.
  4. Add the sautéed vegetables to the crumbled cornbread.
  5. Pour in broth to moisten the mixture and stir in fresh herbs, salt, and pepper.
  6. Transfer the mixture to a greased baking dish, pressing down gently.
  7. Bake for 30-35 minutes until golden brown and crispy on top.
  8. Serve warm as a side dish or part of a vegetarian meal.

Notes

Use stale cornbread for better texture. Customize by adding cooked sausage or nuts if desired.
