Ingredients

- 4 cups of fresh corn (cooked and cooled)
- 1 cup of cherry tomatoes (halved)
- 1 cup of bell peppers (diced)
- 1/2 cup of red onion (finely chopped)
- 1 cup of mayonnaise
- 1/4 cup of sour cream
- 2 tablespoons of lime juice
- Salt and pepper to taste
- 1/4 cup of fresh cilantro (chopped)
Instructions
- In a large bowl, combine the cooked corn, cherry tomatoes, bell peppers, and red onion.
- In a separate bowl, mix together the mayonnaise, sour cream, lime juice, salt, and pepper until well combined.
- Pour the dressing over the corn mixture and toss gently to coat.
- Add the chopped cilantro and mix again.
- Chill in the refrigerator for at least 30 minutes before serving.
