Ingredients

- 2 cups of ripe tomatoes, chopped
- 1 head of garlic, roasted
- 1 medium onion, diced
- 2 tablespoons of olive oil
- 2 cups of vegetable broth
- 1 cup of heavy cream
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Spread the chopped tomatoes and whole head of garlic on a baking sheet, drizzle with olive oil, and roast for 25-30 minutes.
- In a pot, sauté the diced onion until translucent.
- Add the roasted tomatoes and garlic (squeeze out the garlic cloves) to the pot.
- Pour in the vegetable broth and bring to a simmer.
- Blend the soup until smooth, then stir in the heavy cream.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh basil.
Notes
- For a vegan version, substitute heavy cream with coconut cream.
- Adjust the seasoning according to your taste.
