Ingredients

  • 2 cups of ripe tomatoes, chopped
  • 1 head of garlic, roasted
  • 1 medium onion, diced
  • 2 tablespoons of olive oil
  • 2 cups of vegetable broth
  • 1 cup of heavy cream
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Spread the chopped tomatoes and whole head of garlic on a baking sheet, drizzle with olive oil, and roast for 25-30 minutes.
  3. In a pot, sauté the diced onion until translucent.
  4. Add the roasted tomatoes and garlic (squeeze out the garlic cloves) to the pot.
  5. Pour in the vegetable broth and bring to a simmer.
  6. Blend the soup until smooth, then stir in the heavy cream.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh basil.

Notes

  • For a vegan version, substitute heavy cream with coconut cream.
  • Adjust the seasoning according to your taste.
