Instructions
- Prep the Chicken: Start by thoroughly washing your chicken pieces, patting them dry with paper towels.
- Marinate: Combine the buttermilk and spices in a large bowl. Immerse the chicken and refrigerate for at least 4 hours.
- Make the Flour Mixture: Whisk together the all-purpose flour, cornflour, and baking powder in another bowl.
- Coat the Chicken: Remove chicken from marinade, let excess drip off, and coat each piece in the flour mixture.
- Enhance the Texture: Spritz the coated chicken with cold water before tossing it in the flour mixture again for added crunch.
- Heat the Oil: In your fryer, heat oil to 170°C to 175°C (340°F to 350°F).
