Ingredients

- 2 salmon fillets
- 1 cup of jasmine rice
- 2 cups of water
- 1 tablespoon of olive oil
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 avocado, sliced
- 1 cup of mixed greens
- 1/4 cup of soy sauce
- 1 tablespoon of sesame seeds
Instructions
- Rinse the jasmine rice under cold water until the water runs clear.
- In a pot, combine the rice and water, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
- While the rice is cooking, season the salmon fillets with olive oil, salt, and pepper.
- Heat a skillet over medium-high heat and cook the salmon for about 4-5 minutes on each side until crispy and cooked through.
- Once the rice is done, fluff it with a fork and divide it into bowls.
- Top the rice with the crispy salmon, sliced avocado, and mixed greens.
- Drizzle with soy sauce and sprinkle with sesame seeds before serving.
Notes
- For extra flavor, marinate the salmon in soy sauce for 30 minutes before cooking.
- Feel free to add other vegetables like cucumbers or radishes for added crunch.
