Description
An explosion of flavor featuring juicy chicken enveloped in a crispy, spicy crust with fresh jalapeños.
Ingredients
Scale
- 1 pound chicken breasts
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1/2 cup cornmeal
- 1 tablespoon paprika
- 1 teaspoon cayenne pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1–2 jalapeños, sliced
- Vegetable oil for frying
Instructions
- Marinate the Chicken: In a large bowl, immerse the chicken breasts in buttermilk. Cover and refrigerate for at least one hour, preferably overnight.
- Prepare the Dredging Mixture: In a shallow dish, combine flour, cornmeal, paprika, cayenne pepper, garlic powder, onion powder, salt, and pepper. Mix well.
- Dredge the Chicken: Once marinated, remove the chicken from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture.
- Heat the Oil: In a cast iron skillet, pour enough vegetable oil to cover the bottom. Heat over medium-high until shimmering.
- Fry the Chicken: Carefully lower the chicken into the hot oil, fry for about 6-8 minutes per side, until golden brown.
- Add the Jalapeños: In the last few minutes of cooking, add the sliced jalapeños to the skillet.
- Drain and Serve: Once cooked, remove the chicken and jalapeños from the skillet, draining on paper towels.
- Enjoy: Serve hot, perhaps with a favorite dipping sauce or a squeeze of lime juice.
Notes
Marinate the chicken overnight for enhanced flavor and tenderness. Consider using an air fryer for a healthier option.
