Ingredients

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. In a crock pot, combine the sweet potatoes, black beans, diced tomatoes, vegetable broth, onion, garlic, and bell pepper.
  2. Add the chili powder, cumin, salt, and pepper.
  3. Stir well to combine all ingredients.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. Once cooked, stir and adjust seasoning if necessary before serving.
