- 2 medium sweet potatoes, peeled and diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 1 cup vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- In a crock pot, combine the sweet potatoes, black beans, diced tomatoes, vegetable broth, onion, garlic, and bell pepper.
- Add the chili powder, cumin, salt, and pepper.
- Stir well to combine all ingredients.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, stir and adjust seasoning if necessary before serving.
Notes
- For added heat, consider adding jalapeños or cayenne pepper.
- This chili can be topped with avocado, cilantro, or cheese if desired.
- Leftovers can be stored in the refrigerator for up to 5 days.
