  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup uncooked pasta (such as penne or rotini)
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Place the chicken breasts in the bottom of the crockpot.
  2. Add the chicken broth, diced tomatoes, onion, garlic, basil, oregano, salt, and pepper.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. About 30 minutes before serving, shred the chicken in the crockpot and stir in the uncooked pasta.
  5. Cover and cook until the pasta is tender, about 30 minutes.
  6. Stir in the mozzarella and Parmesan cheese until melted and combined.
  7. Serve hot, garnished with additional cheese if desired.
