- 1 pound boneless, skinless chicken breasts
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup chopped onion
- 2 cloves garlic, minced
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup uncooked pasta (such as penne or rotini)
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
Instructions
- Place the chicken breasts in the bottom of the crockpot.
- Add the chicken broth, diced tomatoes, onion, garlic, basil, oregano, salt, and pepper.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, shred the chicken in the crockpot and stir in the uncooked pasta.
- Cover and cook until the pasta is tender, about 30 minutes.
- Stir in the mozzarella and Parmesan cheese until melted and combined.
- Serve hot, garnished with additional cheese if desired.
Notes
- For a thicker soup, you can add more pasta or reduce the amount of broth.
