- 1 cup breadcrumbs

Instructions
- Prep your zucchinis: Slice them into coins or stick shapes.
- Mix your dry ingredients in one bowl: breadcrumbs, Parmesan, garlic powder, onion powder, salt, and pepper.
- Prepare the egg wash: In another bowl, beat the eggs until smooth.
- Coat the zucchini by dipping each piece in egg wash, then in the breadcrumb mixture.
- Heat the oil in a frying pan over medium heat until it shimmers.
- Fry until golden brown on both sides, about 2-3 minutes per side.
- Drain excess oil on paper towels and serve hot.
Notes
For a healthier option, try baking at 425°F for about 20 minutes instead of frying.
