Ingredients

  • 1 cup breadcrumbs

  • 1 teaspoon onion powder

  • 2 eggs

Instructions

  1. Prep your zucchinis: Slice them into coins or stick shapes.
  2. Mix your dry ingredients in one bowl: breadcrumbs, Parmesan, garlic powder, onion powder, salt, and pepper.
  3. Prepare the egg wash: In another bowl, beat the eggs until smooth.
  4. Coat the zucchini by dipping each piece in egg wash, then in the breadcrumb mixture.
  5. Heat the oil in a frying pan over medium heat until it shimmers.
  6. Fry until golden brown on both sides, about 2-3 minutes per side.
  7. Drain excess oil on paper towels and serve hot.

Notes

For a healthier option, try baking at 425°F for about 20 minutes instead of frying.
