- 0.5 cup full-fat Greek yogurt
- 1 tablespoon baking powder
- 0.25 cup melted butter or coconut oil
- 0.25 teaspoon salt
- 0.5 teaspoon xanthan gum or psyllium husk powder
- 0.5 cup finely ground almond flour (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Mix the wet ingredients: In a large bowl, whisk together the eggs and Greek yogurt until smooth.
- Melt the butter in a small pot or microwave, then let it cool slightly.
- Combine the melted butter into the egg and yogurt mixture, whisking until incorporated.
- Mix the dry ingredients separately: Combine baking powder, salt, xanthan gum (or psyllium), and almond flour.
- Combine the dry and wet mixtures gently until just combined, being careful not to overmix.
- Pour the batter into a greased or lined loaf pan.
- Bake for 40-50 minutes or until a toothpick comes out clean, then let cool in the pan for 10 minutes before cooling completely on a wire rack.
Notes
This bread stays fresh in the fridge for several days, and it can be frozen for longer storage.
