Ingredients

  • 0.5 cup full-fat Greek yogurt
  • 1 tablespoon baking powder
  • 0.25 cup melted butter or coconut oil
  • 0.25 teaspoon salt
  • 0.5 teaspoon xanthan gum or psyllium husk powder
  • 0.5 cup finely ground almond flour (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the wet ingredients: In a large bowl, whisk together the eggs and Greek yogurt until smooth.
  3. Melt the butter in a small pot or microwave, then let it cool slightly.
  4. Combine the melted butter into the egg and yogurt mixture, whisking until incorporated.
  5. Mix the dry ingredients separately: Combine baking powder, salt, xanthan gum (or psyllium), and almond flour.
  6. Combine the dry and wet mixtures gently until just combined, being careful not to overmix.
  7. Pour the batter into a greased or lined loaf pan.
  8. Bake for 40-50 minutes or until a toothpick comes out clean, then let cool in the pan for 10 minutes before cooling completely on a wire rack.
