- 2 cups sushi rice
- 2 1/2 cups water
- 1/4 cup rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- 4 sheets nori (seaweed)
- 1 avocado, sliced
- 1 cucumber, julienned
- 1/2 pound shrimp, cooked and sliced
- 1/2 pound eel, cooked and sliced
- Spicy mayo (for drizzling)
- Unagi sauce (for drizzling)
Instructions
- Rinse the sushi rice under cold water until the water runs clear.
- Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer’s instructions.
- In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, fold this mixture into the rice and let it cool.
- Place a sheet of nori on a bamboo sushi mat, shiny side down.
- Spread a thin layer of sushi rice over the nori, leaving a small border at the top.
- Arrange avocado, cucumber, shrimp, and eel in a line across the rice.
- Using the mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll.
- Seal the edge of the nori with a little water.
- Repeat with the remaining ingredients.
- Slice the rolls into bite-sized pieces and drizzle with spicy mayo and unagi sauce before serving.
Notes
- For a vegetarian option, substitute shrimp and eel with tempura vegetables.
- Ensure all seafood is fresh and properly cooked.
- Serve with pickled ginger and wasabi for added flavor.
