  • 2 1/2 cups water
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 4 sheets nori (seaweed)
  • 1 avocado, sliced
  • 1 cucumber, julienned
  • 1/2 pound shrimp, cooked and sliced
  • 1/2 pound eel, cooked and sliced
  • Spicy mayo (for drizzling)
  • Unagi sauce (for drizzling)

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer’s instructions.
  3. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, fold this mixture into the rice and let it cool.
  4. Place a sheet of nori on a bamboo sushi mat, shiny side down.
  5. Spread a thin layer of sushi rice over the nori, leaving a small border at the top.
  6. Arrange avocado, cucumber, shrimp, and eel in a line across the rice.
  7. Using the mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll.
  8. Seal the edge of the nori with a little water.
  9. Repeat with the remaining ingredients.
  10. Slice the rolls into bite-sized pieces and drizzle with spicy mayo and unagi sauce before serving.
