Instructions
- In a mixing bowl, beat the softened cream cheese until smooth.
- Add powdered sugar and vanilla extract, mixing until well combined.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
- In another bowl, combine crushed graham crackers and melted butter, then press the mixture into the bottom of mini cheesecake cups.
- Fill each cup with the cheesecake mixture, smoothing the top.
- If desired, add food coloring to the cheesecake mixture for a festive look.
- Chill in the refrigerator for at least 4 hours or until set.
- Before serving, decorate with chocolate eggs or Easter-themed candies.
