Description

  • 4 oz (115 g) butter, softened
  • 4 oz (115 g) sugar
  • 2 large eggs
  • 8 oz (225 g) all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 4 oz (115 g) marzipan
  • 1 oz (30 g) icing sugar
  • Milk, as needed

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In another bowl, combine the flour, baking powder, and spices.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the mixed dried fruit.
  7. Pour half of the batter into a greased cake tin.
  8. Roll out half of the marzipan and place it on top of the batter in the tin.
  9. Pour the remaining batter over the marzipan layer.
  10. Bake for about 1 hour or until a skewer comes out clean.
  11. Let the cake cool, then cover the top with the remaining marzipan and icing sugar.
  12. Optionally, use a blowtorch to lightly brown the marzipan on top.
