Description
Easter Simnel Cake is a traditional British cake made with fruit and marzipan, typically enjoyed during the Easter season.

- 8 oz (225 g) mixed dried fruit
- 4 oz (115 g) butter, softened
- 4 oz (115 g) sugar
- 2 large eggs
- 8 oz (225 g) all-purpose flour
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 4 oz (115 g) marzipan
- 1 oz (30 g) icing sugar
- Milk, as needed
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- In another bowl, combine the flour, baking powder, and spices.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the mixed dried fruit.
- Pour half of the batter into a greased cake tin.
- Roll out half of the marzipan and place it on top of the batter in the tin.
- Pour the remaining batter over the marzipan layer.
- Bake for about 1 hour or until a skewer comes out clean.
- Let the cake cool, then cover the top with the remaining marzipan and icing sugar.
- Optionally, use a blowtorch to lightly brown the marzipan on top.
Notes
- Ensure the dried fruit is chopped into small pieces for even distribution.
- Store the cake in an airtight container to keep it fresh.
- This cake can be made a few days in advance to enhance the flavors.
