- 1 lb ground beef
- 1 can (10 oz) enchilada sauce
- 8 flour tortillas
- 1 cup shredded cheese
- 1/2 cup chopped onion
- 1 tsp garlic powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add chopped onion, garlic powder, cumin, salt, and pepper to the beef. Cook until the onion is soft.
- Spread a small amount of enchilada sauce on the bottom of a baking dish.
- Fill each tortilla with the beef mixture and a sprinkle of cheese, then roll them up and place them seam-side down in the baking dish.
- Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Let cool for a few minutes before serving.
Notes
- Feel free to add beans or vegetables to the beef mixture for extra flavor and nutrition.
- Top with sour cream or guacamole for added richness.
- These enchiladas can be made ahead of time and frozen before baking.
