Description

Ingredients

  • 12 corn tortillas
  • 2 cups cooked shredded chicken
  • 1 cup green salsa
  • 1 cup sour cream
  • 1 cup shredded cheese (such as Monterey Jack)
  • 1/2 cup chopped onion
  • 2 tablespoons vegetable oil
  • Salt to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat the vegetable oil over medium heat.
  3. Lightly fry the corn tortillas for about 10 seconds on each side until soft.
  4. In a bowl, mix the shredded chicken with half of the green salsa and chopped onion.
  5. Fill each tortilla with the chicken mixture, roll them up, and place them seam-side down in a baking dish.
  6. In a separate bowl, combine the remaining green salsa and sour cream, then pour this mixture over the rolled tortillas.
  7. Sprinkle the shredded cheese on top.
  8. Bake in the preheated oven for 20-25 minutes until the cheese is melted and bubbly.
  9. Serve hot, garnished with additional sour cream or cilantro if desired.

  • For a spicier version, add jalapeños to the chicken mixture.
