- 2 cups cooked, shredded chicken
- 1 can black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 bell pepper, chopped
- 1 onion, chopped
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 cup sour cream
- 1 can diced tomatoes with green chilies
- 1 tablespoon taco seasoning
- Salt and pepper to taste
- Tortilla chips or tortillas (optional for layering)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the shredded chicken, black beans, corn, bell pepper, onion, half of the cheese, sour cream, diced tomatoes, taco seasoning, and a pinch of salt and pepper in a large mixing bowl.
- Grease your 9×13 inch baking dish.
- Layer the chicken mixture evenly in the prepared dish.
- Sprinkle the remaining cheese over the top.
- Bake for 25-30 minutes or until the cheese is bubbling.
- Let it cool slightly before serving.
Notes
You can prepare the casserole up to 24 hours in advance. Serve with Mexican rice, guacamole, and fresh salsa.
