Description

A vibrant casserole filled with seasoned chicken, black beans, corn, and melted cheese, perfect for weeknight dinners or potlucks.


Ingredients

  • 2 cups cooked, shredded chicken
  • 1 can black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup sour cream
  • 1 can diced tomatoes with green chilies
  • 1 tablespoon taco seasoning
  • Salt and pepper to taste
  • Tortilla chips or tortillas (optional for layering)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the shredded chicken, black beans, corn, bell pepper, onion, half of the cheese, sour cream, diced tomatoes, taco seasoning, and a pinch of salt and pepper in a large mixing bowl.
  3. Grease your 9×13 inch baking dish.
  4. Layer the chicken mixture evenly in the prepared dish.
  5. Sprinkle the remaining cheese over the top.
  6. Bake for 25-30 minutes or until the cheese is bubbling.
  7. Let it cool slightly before serving.

Notes

You can prepare the casserole up to 24 hours in advance. Serve with Mexican rice, guacamole, and fresh salsa.
