- 2 teaspoons garlic powder

- 1 teaspoon cumin

- 1 cup cooked rice or quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1 cup tzatziki sauce
Instructions
- In a bowl, combine olive oil, garlic powder, paprika, cumin, salt, and pepper. Add diced chicken and marinate for at least 30 minutes.
- Cook the marinated chicken in a skillet over medium heat until fully cooked, about 7-10 minutes.
- Prepare the rice or quinoa according to package instructions.
- In serving bowls, layer the cooked rice or quinoa, followed by the cooked chicken, cherry tomatoes, cucumber, red onion, and parsley.
- Drizzle with tzatziki sauce before serving.
Notes
- For a spicier version, add cayenne pepper to the marinade.
