Ingredients

  • 1 teaspoon cumin

  • 1 cup cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1 cup tzatziki sauce

Instructions

  1. In a bowl, combine olive oil, garlic powder, paprika, cumin, salt, and pepper. Add diced chicken and marinate for at least 30 minutes.
  2. Cook the marinated chicken in a skillet over medium heat until fully cooked, about 7-10 minutes.
  3. Prepare the rice or quinoa according to package instructions.
  4. In serving bowls, layer the cooked rice or quinoa, followed by the cooked chicken, cherry tomatoes, cucumber, red onion, and parsley.
  5. Drizzle with tzatziki sauce before serving.
