Instructions

  1. In a large pot, heat olive oil over medium heat. Add the sliced onions and cook until caramelized, about 15-20 minutes.
  2. Add minced garlic and cook for an additional minute.
  3. Pour in the beef broth and water, then add thyme and bay leaf. Bring to a simmer.
  4. Add the pasta and cook according to package instructions until al dente.
  5. Remove the bay leaf, season with salt and pepper, and stir in the grated Gruyère cheese until melted.
  6. Serve hot, garnished with additional cheese if desired.
