- 2 cloves garlic, minced
- 4 cups beef broth
- 1 cup water
- 1 teaspoon thyme
- 1 bay leaf
- 8 ounces pasta (such as macaroni or penne)
- 1 cup grated Gruyère cheese
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add the sliced onions and cook until caramelized, about 15-20 minutes.
- Add minced garlic and cook for an additional minute.
- Pour in the beef broth and water, then add thyme and bay leaf. Bring to a simmer.
- Add the pasta and cook according to package instructions until al dente.
- Remove the bay leaf, season with salt and pepper, and stir in the grated Gruyère cheese until melted.
- Serve hot, garnished with additional cheese if desired.
Notes
- For a vegetarian version, substitute beef broth with vegetable broth.
- Feel free to add cooked beef or chicken for extra protein.
- This soup can be made ahead and reheated, but the pasta may absorb some broth.
