A delicious twist on traditional lasagna, featuring layers of garlic butter shrimp scampi, creamy cheese, and pasta.

- 12 lasagna noodles
- 1 pound shrimp, peeled and deveined
- 1/2 cup unsalted butter
- 4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes
- 1 cup heavy cream
- 2 cups shredded mozzarella cheese
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions; drain and set aside.
- In a large skillet, melt the butter over medium heat. Add the garlic and red pepper flakes, cooking until fragrant.
- Add the shrimp to the skillet and cook until pink and opaque, about 3-4 minutes. Remove from heat.
- In a bowl, mix the heavy cream, ricotta cheese, and half of the mozzarella cheese. Season with salt and pepper.
- In a baking dish, spread a layer of the cream mixture, followed by a layer of lasagna noodles, then a layer of shrimp. Repeat the layers, finishing with the cream mixture on top.
- Sprinkle the remaining mozzarella and Parmesan cheese on top.
- Bake in the preheated oven for 25-30 minutes, or until bubbly and golden brown.
- Let it cool for a few minutes before serving. Garnish with fresh parsley.
Notes
- For a spicier version, increase the amount of red pepper flakes.
- Feel free to add vegetables like spinach or zucchini for added nutrition.
- This dish can be made ahead of time and stored in the refrigerator before baking.
