- 2 large sweet potatoes, peeled and cubed
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, combine the cubed sweet potatoes, olive oil, minced garlic, salt, pepper, and thyme. Toss until the sweet potatoes are well coated.
- Spread the sweet potatoes in a single layer on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender and golden brown, stirring halfway through.
- Remove from the oven and sprinkle with grated Parmesan cheese. Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
