- 2 cups cooked chicken, shredded
- 1 cup gnocchi
- 1 cup mixed vegetables (carrots, peas, corn)
- 1/2 cup onion, diced
- 2 cloves garlic, minced
- 3 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
- 1 pie crust
Instructions
- Preheat the oven to 400°F (200°C).
- In a large pot, sauté onions and garlic until translucent.
- Add shredded chicken, mixed vegetables, thyme, rosemary, salt, and pepper; stir to combine.
- Pour in chicken broth and bring to a simmer.
- Stir in heavy cream and gnocchi; cook for 5 minutes.
- Transfer the mixture to a pie dish and cover with pie crust.
- Cut slits in the crust to allow steam to escape.
- Bake for 25-30 minutes or until the crust is golden brown.
- Let cool for a few minutes before serving.
Notes
- Feel free to use leftover rotisserie chicken for convenience.
- For a healthier option, use whole wheat gnocchi.
- Can be made ahead and frozen before baking.
