Description

Ingredients

  • 1 lb chicken breast, diced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • Water to thin the sauce

Instructions

  1. In a bowl, mix the diced chicken with olive oil, garlic powder, onion powder, oregano, salt, and pepper.
  2. Heat a skillet over medium heat and cook the chicken until golden brown and cooked through, about 7-10 minutes.
  3. In a separate bowl, whisk together tahini, lemon juice, and enough water to reach desired consistency.
  4. In serving bowls, layer cooked quinoa, cooked chicken, cherry tomatoes, cucumber, red onion, and feta cheese.
  5. Drizzle the lemon tahini sauce over the top and serve immediately.
