Ingredients

- 1 lb chicken breast, diced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 cups cooked quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup tahini
- 2 tablespoons lemon juice
- Water to thin the sauce
Instructions
- In a bowl, mix the diced chicken with olive oil, garlic powder, onion powder, oregano, salt, and pepper.
- Heat a skillet over medium heat and cook the chicken until golden brown and cooked through, about 7-10 minutes.
- In a separate bowl, whisk together tahini, lemon juice, and enough water to reach desired consistency.
- In serving bowls, layer cooked quinoa, cooked chicken, cherry tomatoes, cucumber, red onion, and feta cheese.
- Drizzle the lemon tahini sauce over the top and serve immediately.
Notes
- For a vegetarian option, substitute chicken with grilled vegetables or chickpeas.
- Adjust the thickness of the tahini sauce by adding more or less water.
