- 2 ripe peaches, halved and pitted
- 4 oz goat cheese, crumbled
- 2 cups arugula
- 1/4 cup balsamic glaze
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook the farro according to package instructions until tender.
- Preheat the grill to medium heat.
- Brush the peach halves with olive oil and season with salt and pepper.
- Grill the peaches for about 3-4 minutes on each side until grill marks appear and they are slightly softened.
- In a large bowl, combine the cooked farro, arugula, and crumbled goat cheese.
- Slice the grilled peaches and add them to the bowl.
- Drizzle with balsamic glaze and toss gently to combine.
- Serve warm or at room temperature.
