- ½ cup almond flour
- ½ cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- 2 large eggs, beaten
- ¼ cup crushed pork rinds (optional, for extra crunch)
Instructions
- Prep the tortillas by brushing each side lightly with melted butter.
- Create the cream cheese mixture by combining softened cream cheese, ground cinnamon, vanilla extract, and erythritol in a bowl.
- Spread about 1 tablespoon of the mixture evenly over each tortilla, leaving half an inch along the edges.
- Roll the tortilla tightly like a jelly roll, sealing the edge with the buttered side.
- Coat each roll-up in the beaten eggs, then roll them in a mixture of almond flour, mozzarella, Parmesan, and pork rinds.
- Cook in a heated non-stick skillet with butter until golden brown, about 2-3 minutes per side.
- Bake in a pre-heated oven at 375°F for 8-10 minutes.
- Slice into 1-inch pinwheels and dust with cinnamon before serving.
