  • 2 tbsp butter, melted
  • 8 oz cream cheese, softened
  • 1 tsp ground cinnamon
  • ½ tsp vanilla extract
  • 2 tbsp erythritol (or preferred keto sweetener)
  • ½ cup almond flour
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 2 large eggs, beaten
  • ¼ cup crushed pork rinds (optional, for extra crunch)

Instructions

  1. Prep the tortillas by brushing each side lightly with melted butter.
  2. Create the cream cheese mixture by combining softened cream cheese, ground cinnamon, vanilla extract, and erythritol in a bowl.
  3. Spread about 1 tablespoon of the mixture evenly over each tortilla, leaving half an inch along the edges.
  4. Roll the tortilla tightly like a jelly roll, sealing the edge with the buttered side.
  5. Coat each roll-up in the beaten eggs, then roll them in a mixture of almond flour, mozzarella, Parmesan, and pork rinds.
  6. Cook in a heated non-stick skillet with butter until golden brown, about 2-3 minutes per side.
  7. Bake in a pre-heated oven at 375°F for 8-10 minutes.
