Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 cup roasted sweet potatoes, cubed
  • 1 cup cooked chickpeas
  • 1 cup kale, chopped
  • 1/2 cup cranberries
  • 1/4 cup pumpkin seeds
  • 1/4 cup feta cheese (optional)

Instructions

  1. Rinse the quinoa under cold water and drain.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes or until liquid is absorbed.
  3. While quinoa cooks, roast sweet potatoes in the oven at 400°F (200°C) for 25-30 minutes.
  4. In a large bowl, combine cooked quinoa, roasted sweet potatoes, chickpeas, kale, cranberries, and pumpkin seeds.
  5. In a small bowl, whisk together maple syrup, Dijon mustard, olive oil, salt, and pepper to make the dressing.
  6. Drizzle the dressing over the grain bowl and toss to combine.
  7. Top with feta cheese if desired and serve warm or cold.

Notes

  • Feel free to add other vegetables like bell peppers or avocado.
  • This bowl can be made ahead of time and stored in the fridge for up to 3 days.
